How To Make Instant Oatmeal Muffins Quakertime

As soon as school time was near images of starving children popped in my head.  The kids are always famished when they get home for school so the first thing I did was shop for snacks I could feed them quickly and easily.

While taking a stroll down the cereal isle in Walmart I grabbed Daddy’s favorite Captain Crunch, as well as Chewy dipped granola bars and their favorite Quaker Instant Oatmeal in a giant value pack of 2o.  That is when it came to me, “I’ll make a bunch of muffins with their favorite flavors.”  It is perfect, I like making muffins and it is a better choice when we are in a hurry for breakfast or as an after school snack.

Instant Oatmeal Muffin Recipe

Ingredients

2 cups unbleached all purpose flour

2 packets of Quaker flavored instant oatmeal

1/2 cup sugar

1 tbsp baking powder

1 cup milk

1 large egg

4 tbsp butter

Directions

Preheat oven to 400 degrees

Grease and flour your muffin pan

Combine dry ingredients (flour, baking powder and salt.)

In a separate bowl beat eggs, add sugar and milk.  Stir in your melted butter

Stir wet ingredients with the dry.

Add 2 packages of Quaker Instant Oatmeal

Fill each muffin cup 3/4 of the way full

Bake 16 to 20 minutes or until toothpick comes out clean

This was our first week of school and just like I thought, they came home starving.  All the snacks I bought at Walmart and the muffins I made have worked out perfectly.Instead of all the kids coming at me at once I have snacks ready for them to choose from.The portions are the right size and they can nibble while they read or do their other home work.
