Slider Recipes: Black Bean Veggie Burger

If I could help it, grilling season would be all year long. Here is a delicious veggie alternative I have been wanting to try: Black Bean Veggie Burger. This recipe has some of my favorite flavors like warm mixed with black beans, rice, and red bell pepper.

Black Bean Veggie Burger

Ingredients


  • 1 pkg Minute® Ready to Serve Black Beans and Rice
  • 1 egg
  • ½ tsp cumin
  • ½ tsp paprika
  • ½ tsp dried oregano
  • 1 shallot, minced
  • 1 clove fresh garlic, minced
  • 1 small red bell pepper, chopped
  • ¼ cup breadcrumbs
  • 4 slices cheddar cheese
  • 1 tsp olive oil
  • 4 hamburger buns


Instructions


  1. Prepare black beans and rice according to package directions but do not combine. 
  2. Using the back of a fork, mash up the black beans until they turn into a paste-like consistency and set both rice and beans aside to cool.
  3. Meanwhile, in a medium-sized mixing bowl, beat one egg. To the same bowl, add the cumin, paprika, oregano, shallot, garlic, bell pepper, and breadcrumbs. Fold in the black beans and rice and mix until well blended. 
  4. Form the burger mixture into four patties and, using your thumb, insert the slice of cheddar cheese in the center of each burger. If making sliders, use a scoop to portion out 8 smaller patties.
  5. Heat a medium sauté pan or cast iron skillet on medium-high heat and add olive oil. 
  6. Carefully add the burger patties and cook for about 3-5 minutes on each side until lightly browned and warm throughout. Place the cooked patties on toasted burger buns.

More Healthy Recipe Alternatives:

Lettuce Wrapped around the burger instead using hamburger buns.
Egg Substitute: Try using ground flax seed with water.
If dairy is not your thing, omit the cheese or use a substitute like Daiya Lactose-free slices.
